Detection is done by observation. Observation on positions in games, when these
people play, how often they play each other in hands. Observation on if they
make eye contact often, very hard to catch unless you know how to look for it.

As far as defense, there are only two. Quit the game and avoid the players or
get your own army and attack. The quitting part is by far the more reasonable,
as no matter what anyone says, these scamming groups will methodically syphon
money out of the game just as the rake will. Normally their rake is far greater
than any the casino imposes.
The attacking with your own army of scammers is political. As I have stated,
you need to have power with the management. For in many cases, going up against
a scamming pack with another will get you barred. Those with the juice have the
francise.
As Doyle stated in some manner, "you can't cheat the big game because we all
know each other and any strangers would have a hard if not impossible time
getting in to do this." This is correct, but what if Doyle and crew were doing
the cheating? By the way, they are and have been for decades.
