I found it hard to believe that people were suggesting you had a weak
hand and therefore should be playing from a position of weakness.

At the specific point of the hand that you described in your original
question, you had no reason to think that you had anything other than
the best hand.

As long as you didn't reraise preflop (which would have been a good
idea, as pointed out above) and wasn't an option within the context of
your question, i would have said, bet, forcing UTG+1 to act and to find
out from the other player if the pre flop raise was for real.

A check, with a check raise in mind or not, could result in just letting
everybody off the hook. Pocket pair, not a good time to slow play.

I agree with the comment that you should have reraised preflop.
Simply calling basically puts you in the position of having to hit an
8 to win the pot, while reraising will likely make you heads up with
the raiser, and you can find out on the flop where you stand.
