There are more hands per hour, up to 100 and more. Everyone gets there
more of something per hour:
casino - gets more rake
active player - more fun and action
good player - more money

For the player, you get to play more hands, you don't fold so many
hands from early position.

For the cardroom, more hands get dealt, better rake.

I assume you mean online games. The appeal is faster action. The fewer
players, the more hands per hour, plus the more hands those players can--
and must!--play. Where you might fold small pairs in a 10-handed game
in early position, you might find it a better strategy instead to play
those hands aggressively in the 5-handed game.

Also, more opportunities to be in short-handed situations, so it gives
players a chance to polish their short-handed strategies. In the
5-handed game, you'll have a lot more chances to play in 2- and 3-way
pots.

There are many reasons to play 5 or 6 max tables. I feel that many
players have a hard time adjusting to the game. This can give an
advantage to a regular 5-6 max player They either play too tight or
too loose.

I also like the speed of the game.
